Zucchini pizza with onion and bell pepper

Ingredients (per serving)

1 pcs           Zucchini pizza crust
1 pcs       Red onion
0.3 pcs            Yellow bell pepper
3 pcs     Sundried Tomatoes
1 tbs       Balsamic Vinegar
1 tbs       Tomato paste
0.5 tbs        Olive Oil
0.2 pcs     Green bell pepper
1 pcs       Tomatoes
10 g       Rucola washed

Preparation steps

  1. Preheat the oven to 220 °C and cover a baking tray with baking paper.
  2. Puree half of the tomato with tomato puree, sun-dried tomatoes, olive oil and balsamic vinegar with the hand blender or in the food processor to a smooth sauce. Add a splash of water if needed.
  3. Cut the remaining tomato into thin slices.
  4. Clean the bell pepper and onion. Cut the bell pepper into strips and the onion into half moons.
  5. Bake the pizza crust in the preheated oven for 2-3 minutes without topping.
  6. Spread the tomato sauce on the pizza base and top with the vegetables.
  7. Bake the pizza for 8-10 minutes and serve immediately.
