Zucchini pizza with onion and bell pepper

Ingredients (per serving)
1 pcs Zucchini pizza crust
1 pcs Red onion
0.3 pcs Yellow bell pepper
3 pcs Sundried Tomatoes
1 tbs Balsamic Vinegar
1 tbs Tomato paste
0.5 tbs Olive Oil
0.2 pcs Green bell pepper
1 pcs Tomatoes
10 g Rucola washed
Preparation steps
- Preheat the oven to 220 °C and cover a baking tray with baking paper.
- Puree half of the tomato with tomato puree, sun-dried tomatoes, olive oil and balsamic vinegar with the hand blender or in the food processor to a smooth sauce. Add a splash of water if needed.
- Cut the remaining tomato into thin slices.
- Clean the bell pepper and onion. Cut the bell pepper into strips and the onion into half moons.
- Bake the pizza crust in the preheated oven for 2-3 minutes without topping.
- Spread the tomato sauce on the pizza base and top with the vegetables.
- Bake the pizza for 8-10 minutes and serve immediately.
