Udon noodles with chicken, carrot and parsley oil

Ingredients (per serving)
90 g Udon Noodles
0.4 tbs Extra Virgin Olive Oil
45 g Smoked chicken breast strips
15 g Carrots
1 tbs Flat-leaf parsley
0.3 pcs Zucchini
1.7 Fu le Dou Ketjap Manis Low in Sodium
0.5 tbs Lemondor Lime Juice
0.5 tbs Sesame Oil
0.5 tbs Sweet Chilli Sauce
Preparation steps
- Wash the carrots and zucchini. Remove the ends of the carrot and zucchini. Cut both into cubes.
- Bring a pot of water to the boil and blanch the carrots and zucchini for 3 minutes. Scoop them out of the water with a skimmer and set them aside.
- Prepare the noodles according to the package and drain.
- Chop the parsley finely and mix with the olive oil to form a parsley oil
- Mix the noodles with zucchini, carrot, chicken breast strips, chilli sauce, soy sauce, sesame oil, lime juice and serve in a bowl.
- Garnish with parsley oil.
