Tomato and broccoli stew with rice and chickpeas

Ingredients (per serving)
60 g Dried chickpea
100 g White rice
1 pcs Clove of garlic
1 tbs Tomato paste
0.5 pcs Onions
1.5 tsp Ras el Hanout
1 pcs Tomatoes
0.5 tbs Olive Oil
75 g Broccoli
50 ml Water
Preparation steps
- Cook the rice according to the instructions on the package until al dente. Peel and finely dice the onion and garlic.
- Fry the onion and garlic over medium heat for 3 minutes. Then add the ras el hanout and tomato puree and fry for another 2 minutes.
- Cut the broccoli into small florets and the tomato into chunks. Add the broccoli and tomatoes with the water and stew the vegetables for about 5 minutes, just until tender.
- Rinse and drain the chickpeas. Mix the rice and chickpeas with the vegetables and heat for about 2 more minutes on a low heat.
- Serve the rice and vegetable stew on a plate.
