Tomato and broccoli stew with rice and chickpeas

Ingredients (per serving)

60 g       Dried chickpea
100 g     White rice
1 pcs     Clove of garlic
1 tbs     Tomato paste
0.5 pcs     Onions
1.5 tsp     Ras el Hanout
1 pcs     Tomatoes
0.5 tbs     Olive Oil
75 g     Broccoli
50 ml     Water

Preparation steps

  1. Cook the rice according to the instructions on the package until al dente. Peel and finely dice the onion and garlic.
  2. Fry the onion and garlic over medium heat for 3 minutes. Then add the ras el hanout and tomato puree and fry for another 2 minutes.
  3. Cut the broccoli into small florets and the tomato into chunks. Add the broccoli and tomatoes with the water and stew the vegetables for about 5 minutes, just until tender.
  4. Rinse and drain the chickpeas. Mix the rice and chickpeas with the vegetables and heat for about 2 more minutes on a low heat.
  5. Serve the rice and vegetable stew on a plate.
