Robert's Indian chicken madras with zucchini and basmati rice

Ingredients (per serving)

100 g     Basmati rice
100 g     Chicken breast cubes
1 tbs       Olive Oil
1 tsp       Curry powder
1 pcs      Onion
1 pcs      Apple
1 pcs       Tomato
0.3 pcs     Zucchini
3 tbs     Greek Yoghurt 10% Fat

Preparation steps

  1. Cook the rice according to the instructions on the package.
  2. Clean the onion and slice finely. Wash the tomato and zucchini and cut into cubes. Peel and core the apple and cut into cubes..
  3. Heat the oil in the pan and fry the onion until shiny for 1-2 minutes.
  4. Add the chicken breast and fry until golden brown all over.
  5. Add the curry powder and fry for a minute.
  6. Add the tomato and yoghurt, stir well and simmer for 5-6 minutes.
  7. Add the zucchini and apple and let it heat for 3 minutes.
  8. Drain the rice.
  9. Serve curry with rice.
