Pasta pesto salad with chicken, cherry tomatoes, arugula and basil

Ingredients (per serving)

115 g     Smoked chicken breast
0.5 tbs       Green pesto
25 g       Rucola washed
2 tbs       Parmesan
8 pcs       Cherry tomato
1.5 tbs       Fresh basil
0.5 tbs       Pine nuts
100 g       Fusilli

Preparation steps

  1. Prepare the fusilli according to the preparation method on the package. Then drain and rinse cold.
  2. Heat a frying pan over medium heat and roast the pine nuts until golden brown all over for about 3 minutes.
  3. Cut the chicken breast into strips and the cherry tomatoes into wedges.
  4. Stir the pesto into the pasta, cut the cherry tomatoes in half and mix them in with the arugula.
  5. Garnish the salad with pine nuts, shredded basil leaves and Parmesan cheese.
