Pasta pesto salad with chicken, cherry tomatoes, arugula and basil

115 g Smoked chicken breast
0.5 tbs Green pesto
25 g Rucola washed
2 tbs Parmesan
8 pcs Cherry tomato
1.5 tbs Fresh basil
0.5 tbs Pine nuts
100 g Fusilli
Preparation steps
- Prepare the fusilli according to the preparation method on the package. Then drain and rinse cold.
- Heat a frying pan over medium heat and roast the pine nuts until golden brown all over for about 3 minutes.
- Cut the chicken breast into strips and the cherry tomatoes into wedges.
- Stir the pesto into the pasta, cut the cherry tomatoes in half and mix them in with the arugula.
- Garnish the salad with pine nuts, shredded basil leaves and Parmesan cheese.
