Pasta Party Muffins
Snacking becomes a party with these party muffins.

Ingredients (per serving)
250 g Spaghetti
100 g Black olives
15 g Fresh basil
125 g Frozen green peas
4 pcs Eggs
200 g Hüttenkäse
2 tbs Oregano fresh
1 pinch Black pepper
200 g Pomodoro Passata
Preparation steps
- Preheat the oven to 175°C and grease the muffin tin with coconut oil or cooking spray. Boil the pasta for 10 to 12 minutes and then drain it. Meanwhile, cut the olives into slices and the basil into strips.
- Place the passata di pomodoro in a large bowl, along with olives, basil, green peas, oregano and pepper to taste. Add the cooked spaghetti and stir well. Let the flavors soak in for 10 minutes.
- Whisk the eggs in a bowl and add them to the spaghetti mixture. Stir thoroughly so that all pasta is covered with a thin layer of egg. Grab a piece of spaghetti with a fork and spoon, turn it into a nice nest and place it in the muffin pan. So fill all the trays with a nest of pasta.
- Make a small hole at the top of each pasta nest with a teaspoon and spread the cottage cheese over the muffins. Bake the pasta party muffins in the oven for about 15 minutes. When cold, they are at least as good as they are warm.
